Very Simple Blueberry Muffins

This recipe came from one of my “go-to” websites, www.vegweb.com.  These blueberry muffins are simple, healthy and delicious.

Prep Time: 5 minutes
Cooking Time:  3o minutes
Makes:  8 muffins

     1 1/2 cups whole wheat pastry flour
     1/2 cup whole grain sugar
     1 teaspoon salt
     2 teaspoons baking powder
     3/4 cup soy milk
     1/4 cup extra virgin olive oil (canola or safflower work as well)
     1 cup frozen blueberries

Heat oven to 400° F.  Line a muffin tin with baking cups.

Combine the whole wheat flour, whole grain sugar, salt and baking powder together in a mixing bowl and mix.  Slowly add in the soy milk and oil.  Mix well.  Fold in frozen blueberries.  Pour the batter into the cups about 3/4 full.  Bake for 25-30 minutes.
