This is a very simple and basic vegetable stock. Feel free to play around with different vegetables and herbs.
Preparation time: 40 minutes
Makes about 2 cups stock
1 stalk celery chopped
1 carrot chopped
1 potato chopped
2 cloves garlic chopped
4 fresh sage leaves
2 sprigs fresh thyme
1 tablespoon fresh rosemary
1 tablespoon fresh oregano
½ yellow onion chopped
½ leek
Water
In a medium sized pot combine celery, carrot, potato, garlic, sage, thyme, rosemary and oregano. Add enough cold water to have the top surface of the vegetables covered by one inch. Simmer for an hour adding the onion and leek after 30 minutes of simmering. Strain.
